Blue cheese and green bean salsa

Ingredients

100 gr fine green beans (4 oz)
1 large green pepper
2 spring onions
small handful fresh coriander leaves
2 tbsp olive oil
2 tbs sweet chilli sauce
1 tbsp white wine vinegar
juice of 1/2 lime
75 gr (3 oz) of creamy blue cheese

Instructions

1. Roughly chop the green beans, pepper and spring onions, then place in a bowl with the coriander leaves, oil , sweet chilli sauce, white wine vinegar and lime juice.
2. Whizz with a hand blender (or in a food processor) until you have a coarse paste.
3. Dice the blue cheese and stir into the salsa. Chill until ready to serve.
