Chicken stir fry

This recipe is really
easy once you have done the preparation! Serves 4. Read in 15 minutes.
Requirements: wok and stirrer.

Ingredients

2-3 raw chicken breasts cut into bite size strips
1 large onion - sliced into 8 segments
2 carrots - sliced into discs
oyster sauce - 1 tablespoon (optional)
1 mug of vegetable stock/or/chicken
cornflour - 2 teaspoons dissolved in cold water to thicken
cauliflower florets - small florets as many as you like
broccoli florets - as many as you like
red pepper - 1 or 2 - cut into strips
1 tablespoon oil to fry veg oil is best
garlic - 1-2 cloves diced (optional)
root ginger - about 1" piece peeled and diced (or grated)
dark soy sauce 2 tablespoons
additional options - cashew nuts (add at end) - baby corn - or any veg you like - french green beans are nice

Instructions

1. Prep all veg and meat.
2. Place wok on high heat when hot add the oil, onions, garlic, ginger and the hard veg like carrots and cauliflower.
3. Stir until golden tinge develops on the veg - approx 3 mins
4. Next add the meat - stir fry until golden
5. Add the soft veg - peppers broccoli etc - and stir together for 4 mins
6. Add soy and oyster sauce stir and add stock – simmer for 3 mins
7. Stir cornflour into 1/4 cup water drizzle into pan and stir to thicken.
8. Serve with rice or noodles - sometimes I add noodles into to the stir fry for the last 4 mins before thickening the sauce.
