Curried orange and coriander butter

Serves 4. Takes 5 minutes
plus chilling. Other variations are: garlic and parsley, walnut and blue
cheese, coriander and lemon zest, sun-dried tomato and garlic, orange and
chilli.

Ingredients

100 gr (4oz)softened butter
grated rind of 1 orange
1 tbsp korma curry powder
1 tbsp chopped fresh coriander

Instructions

1. Place the butter in a bowl with the orange rind, curry powder and coriander and beat well together.
2. Turn onto cling film and roll into a sausage shape. Chill for 20 mins, until firm.
3. Serve with grilled mackerel or sardines, add just before the end of cooking so the butter melts into the fish.
