Gooey chocolate slice

Serves 12 people. Takes 15 minutes to make, 20 minutes to bake, plus cooling

Ingredients

100 gr, unsalted butter, dice, plus extra for greasing
100 gr plain chocolate, broken into pieces
3 medium eggs, separeted
125 gr ground almonds
100 gr caster sugar
100 gr plain chocolate chips

Instructions

1. Preheat the oven to 180 c/fan 160/gas 4. grease a 22 cm x 18 cm x 4 cm deep baking tin and line with baking paper. Melt the chocolate pieces and butter in a bowl set over a pan of simmering water. Remove the bowl from the pan and wish in the egg yolks followed by the almonds.

2. In a separate bowl, whisk the eggs whites to stiff peaks, then slowly whisk in the sugar to make a meringue mixture. Gently fold a quarter of the meringue into the chocolate mixture and mix until smooth. Add the rest of the meringue and the chocolate chips. Fold together until evenly combined.

3. Transfer the mixture to the tin and bake for 20 minutes, the slice will rise during baking. Remove from the oven. leave it to settle for 20-30 minutes.(it will sink back down and crack as it gets to the proper consistency), then lift out using the baking paper and slice. Serve warm as a desert with crème fraiche or cold with tea or coffee. It will keep in a sealed container in a cool place for up to 3 days.
