This is my famous soup which was made on the Cosy Cottage Retreat - full of fibre as Steffy found out!! Great winter warmer served with fresh bread. Can be vegetarian. I use a 5 litre pan to make it in.

Ingredients

2 onions diced
3 parsnips peeled and chopped into discs
6 carrots peeled and sliced into discs
2 bay leaves
1 large potato peeled and diced
2 leeks washed, trimmed and sliced
1/4 of swede peeled thickly and diced
either 2 veg stock cubes or some meat stock (chicken or ham works well) enough to top up 5 litre pan
250g of red split lentils

Instructions

In a little vegetable oil fry up the vegetables add Bay Leaves, salt and pepper, and when softened add the stock. Bring to boil and simmer for 15 mins. Add the lentils and continue to stir and simmer for another 15 mins. Skim the surface of the soup. Now either serve the soup 'chunky' or take half out and blend half then return to the pan. If preferred blend the entire pan of soup until smooth. Season to taste serve with warm wholemeal bread or crusty white. Freezes well.

Almost any veg can be used. You can add pasta intstead of the Lentils but the lentils provide a healthy source of protein and more fibre. Sometimes I use the carcus of a chicken to make the stock or a ham bone. I used to make this soup for my Dad when he was having chemo and delivered it to him in freezable containers so he could have some any day he felt like it - really healthy soup but not too heavy. Enjoy!

Having tried Jools soup first hand, I can vouch that it is very tasty , warming and filling, but !!
don't fly the same day as eating this soup, it filled me with wind, I certainly didn't need a plane to fly me home.
