Mustard and onion relish

Ingredients

2 tbsp vegetable oil
3 onions, peeled and slice
1 garlic cloves, crushed
3 tbsp muscovado sugar
4 tbsp red wine vinegar
2 tbs wholegrain mustard
salt and ground black pepper

Instructions

1. Heat the oil in a frying pan and fry the onions until golden brown and softened.
2. Add the garlic and cook for 1 minute then add the sugar, vinegar and mustard.
3. Bring to the boil and cook for 2-3 minutes until syrupy. Season to taste.
