Refried beans

Serves 6-8 people. Ready in 15 minutes

Ingredients

4 tbsp exra-virgin olive oil
1 onion, finely chopped
1 garlic clove, finely chopped
400 gr can kidney or borlotti beans, drained and rinsed
125 gr cheddar grated

Instructions

1. Preheat a heavy base metal tray or fry pan on the barbecue or stove.
2. Add 1 tablespoon of oil and gently fry the onion and garlic for 4-5 mins,stirring, until soft and translucent.
3. Add the kidney or borlotti to the onion and using a potato masher, mash with 2 more tablespoons of the olive oil.
4. Add the remaining oil and cook for 10 mins, stirring to prevent sticking until the beans have adsorbed all the oil.
3. Transfer to a plate with a spatula, top with cheese.
