Sala Lobak – stir fried cabbage with red pepper paste

This recipe comes from Western Sumatra in Indonesia. Serves 4 people.

Ingredients

115 gr/4 oz red pepper, seeded and coarsely chopped
55 gr/2 oz shallots or onions, chopped
2 large garlic cloves, chopped
1/2 tsp shrimp or anchovy paste (optional)
1/4 tsp chilli powder
6 tbsp vegetable oil
450 gr/ 1 lb dark outer cabbage leaves or spring greens, shredded .
1/2 tsp salt

Instructions

1. Combine the red pepper, shallots, garlic, shrimp paste, if using chilli powder and three tablespoons of water in a blender and process to a coarse paste.
2. Heat a wok over a high heat , then add the oil and the spice paste. Stir fry for 5 minutes or until the oil separates and the mixture has a dark red appearance. Add the cabbage and salt and stir fry for 30 seconds.
3. Cover tightly, reduce the heat and cook for 8-10 minutes or until the cabbage is cooked (no water should be needed, but check after 5-6 minutes)
