Seared rib-eye steaks with orange and ginger butter

Ingredients

50 gr softened butter
2 tbsp chopped chives
5 cm peeled and grated root ginger
the grated zest of 1 orange
2 rib-eye steaks
2 tbsp cider vinegar
2 tbsp soy sauce
1 crushed garlic clove

Instructions

1. In a small bowl mix together the butter, chives, root ginger and the orange zest.
2. Mould the butter into a sausage shape, wrap in clingfilm or foil and refrigerate until firm.
3. Place 2 steaks in shallow bowl.
4. Whisk together the cider vinegar, soy sauce and garlic and use it to coat the steak.
5. Cover and marinate in the fridge for 20 mins.
6. Remove steaks and barbecue or grill them.
7. Serve topped with a disco of the orange and ginger butter.
