Tuna Ki Kari - curried tuna

Serves 2-3 people and this is nice in sandwiches, on toast and with salads.
Do not drain the oil from the tuna.!!!

Ingredients

1 1/2 tbsp vegetable oil
55 gr/ 2 oz onions, cut in to fine half rings
1 garlic clove, very finely chopped
1 tsp curry powder
180 g can tuna in oil
1/2 1 fresh green chilli, finely sliced
1 cm/ 1/2 in fresh root ginger, sliced
2-3 tbsp chopped fresh coriander
salt and freshly ground black pepper

Instructions

1. Heat the oil in a non-stick frying pan and when hot, add the onions, and garlic. Stir fry until the onions turn brown at the edges, then add the curry powder and stir

2. Stir in the tuna, breaking up and any large lumps, then reduce the heat and add the chilli, ginger and coriander. Stir to mix, check seasoning and add salt if needed. Add a generous amount of black pepper, mix well and turn off the heat. Serve hot, at room temperature or cold.
